The 288 Chardonnay plants produce about 450kg of fruit every year which we hand harvested, ferment with wild yeast and mature in french oak generally producing twenty five cases of this wine. Malolactic fermentation did not complete leaving about 3G/L Malic acid, this has given a succulent crunchy character to the wine now shows good structure with a healthy amount of oak. Slight creamed corn and tropical fruit with fresh toasted oak and a hint of confectionary on nose. The palate displays yeast and nutty characters with plenty of burnt toast and finishes with crisp cleansing acidity. This wine is ageing gracefully, still improving and we expect it cellar for at least 10 years. Updated 16/8/19.
