We have been making our own wine on site since 2010.
Primarily we are viticulturists who view the wine making as a natural process requiring minimal intervention from us.
Our wines are an expression of our site, our personalities and the environment. For most of our wines the maximum production each year is 30 cases .
Mixed cases are available by direct contact and email is preferred, these can be 3 bottles, 6 bottles or 12 bottles.

Our Gewürztraminer 2014 is more of a New World style. The fruit is hand picked, de-stemmed and left for a few hours before being pressed in a basket press then the juice was fermented by wild yeast in an old oak barrel until dry. This wine has aromas of rose petal and geranium. The palate is round and smooth with lychees and Turkish delight.
Serve: Well Chilled
Silver medal winner at the Alpine Pacific wine challenge October 2018. Our Gewürztraminer 2016 is more of an Alsatian stlye having a bit more acidity and less intense aromas than our normal New World style. The fruit is hand picked, de-stemmed and left for a few hours before being pressed in a basket press then the juice was fermented by wild yeast in an old oak barrel until dry. This wine has aromas of rose petal and geranium. The palate is round and smooth with lychees and Turkish delight and finishes with light, cleansing acidity.

The Pinot Noir fruit is hand picked, fermented with wild yeasts, a small element of whole bunches included in the ferment depending on the season and then matured in french oak resulting in a wine which is elegant, long and generous on the palate with aromas of ripe cherries and raspberries. This wine is unfined and unfiltered meaning possibly more flavour!

The Gathering 2016 is an equal blend of Chardonnay, Grüner Veltliner and Riesling. The fruit was hand harvested, fermented separately, then blended and matured in oak barrels. A highly complex lighter style with light aromas of toasted oak and tropical fruit. The palate balanced and intriguing with hints of creamed corn and tropical fruit.

2010 was the first year we made wine on the Estate.This wine is bone dry and has 1.8g/l of residual sugar and was matured in old oak barrels. Aging gracefully this wine has a hint of Jasmine, toasted oak, Kerosene and pineapple on the nose and the palate offers honey, grapefruit and a hint of creamed corn with light and crisp finish. This is a silver medal winning wine at the 2017 Christchurch International Aromatic Wine Competition. This dry Riesling has about 4g/L residual sugar. Barrel fermented and ageing gracefully. A classic Waipara wine.

The 350 Pinotage plants which produced this fruit are hand tended solely by Lynda Ball. Each vintage is fermented with wild yeast, then matured in french oak producing a deliciously fruity, medium to full bodied wine.

The 288 Chardonnay plants produce about 450kg of fruit every year which we hand harvested, ferment with wild yeast and mature in french oak generally producing twenty five cases of this wine. Malolactic fermentation did not complete leaving about 3G/L Malic acid, this has given a succulent crunchy character to the wine now shows good structure with a healthy amount of oak. Slight creamed corn and tropical fruit with fresh toasted oak and a hint of confectionary on nose. The palate displays yeast and nutty characters with plenty of burnt toast and finishes with crisp cleansing acidity. This wine is ageing gracefully, still improving and we expect it cellar for at least 10 years. Updated 16/11/20

Silver medal in Dish Top Twelve Chardonnays August 2019
For the first time in 10 years these plants have given enough fruit to make a straight Tempranillo instead of having to blend it in the Merger. Hand harvested, fermented with wild yeast and matured in an American oak barrel, this wine has aromas of sweet spice and ripe black stone fruit with a hint of cocoa. The palate is long, rich and smooth.

The Merger is a blend of Tempranillo, Pinotage and Pinot Noir in varying amounts, again hand harvested, fermented separately with wild yeasts and matured together in American oak producing a smooth, rich, medium bodied wine with complex characters. This wine has been awarded a Silver medal in the 2019 Alpine Pacific Wine Challenge, it was one point off a gold medal and no other red wine scored better. Updated 4/11/19

With over 100g/l of residual sugar this wine has aromas of tropical fruit and sweet citrus flowers. The palate is initially sweet but crisp acidity soon follows cleansing the palate. This wine will make your taste buds dance and is made more attractive by being lower in alcohol. This wine makes for a great lunchtime drink with 10.3% alc. This wine has been awarded a Silver medal in the 2019 Alpine Pacific Wine Challenge. Updated 04/11/19

We have called this wine an off-dry aperitif and should be approached as one would a dry sherry. the wine was made in 2014 from Riesling and has spent 3 years maturing in oak barrels. It has 16% alcohol and has achieved this naturally, without fortification. It should be served well chilled and has generous aromas of dried apricot and new leather, the palate is rich and smooth with along, dry finish.

Made from Pinotage which is tenderly cared for by Lynda, this vibrant, pink, full bodied and big textured wine has delicate aromas of summer fruit followed by candy floss on the palate.

Grüner Veltliner 2020. A well balanced excellent food wine with a crunchy texture and aromas of tropical fruit, honey and beeswax. a good lunchtime wine at 12.5%alc.
Romping Rosé 2018. A silky smooth textured wine made from Pinotage. Summer fruit and confectionary on the nose, serve well chilled.
Riesling Medium 2018. With only 10.3%alc this makes a great lunch wine, it is initially sweet but has lovely cleansing acidity. Serve well chilled.
Tempranillo 2016. A very pleasant drop. Ripe black cherries and spicy oak on the nose with good concentration, a real gem on a hot evening.
This Grüner Veltliner has just been bottled (5/11/20) and is crisp with acidity typical of this variety and a lush, pineapple fruitiness. The nose is ripe tropical fruit with more subtle honey and beeswax. The fruit was hand picked, pressed in a basket press then the juice was fermented by wild yeast in old oak barrels until dry. The wine will age gracefully and we’ll change the notes accordingly. The bottle and label will vary from the photo. The label has gold text and bottles have gold caps over clear glass bottles and antique green bottles. Lighter in alcohol at 12.5% this wine lends itself to accompanying many food types like seafood, stir fry, cheese courses and curry.
